
This is one of my go to breakfasts! Living in Thailand there is an abundance of bananas and mangoes so this is really cheap to make. Basil seeds are another great source of protein and are similar to chia seeds but more money savvy. If you wanted, you can add protein powder into the blender (sometimes I add in chocolate protein powder and switch the mango for a dollop of peanut butter.) I hope you enjoy it!
Ingredients
2 ripe frozen bananas
½ cup of coconut milk or 8 tbsp
1 mango
2 tbsp oats (optional)
1 tbsp basil seeds or chia seeds (optional)
Sprig of mint for garnish
Step 1
Chuck those glorious frozen bananas in the blender along with the coconut milk and blend until thick and smooth. (add the coconut milk in gradually as it depends on the size of bananas for how much you need – this is for 2 cavendish bananas)
Step 2
Chop up the mango into cubes, and have your other ingredients ready to go.
Step 3
Plate up! Pour the nice cream into a bowl, too with the chopped mango, oats and basil seeds or chia seeds.
Step 4
Garnish with mint and hey presto its breakfast time!
