
I get an organic vegetable bow delivery each week and it has a big mixture of produce (many of which I have no clue what they are). One of the veg I had never come across before was a wintermelon and I am ashamed to say I didn’t know what to do with it so it often went to waste. So here’s to you wintermelon and may you never go to waste again.
Ingredients
½ wintermelon (peeled and cubed)
Dried Wakame seaweed (your choice of how much)
5 cloves of garlic
½ bunch of coriander
Dried tofu (2 long strips crushed)
500ml vegetable stock (homemade from veg scraps or store bought)
2 tbsp Chinese five spice
1 tbsp soy sauce
Step 1
Pour stock into a pan on a medium heat and add in wintermelon, seaweed and five spice and let simmer for 2/3 minutes.
Step 2
Add the crushed dried tofu and garlic to the pan and leave to simmer on a low heat for 10 minutes. Depending on how soupy you like your soup you can add more water before this step.
Step 3
Chop the coriander and add to the soup with the soy sauce, give it a good stir and then leave to simmer on low for another 5 minutes.
Step 6
Grab a bowl and eat some delicious soup!
