
This is super easy to make, its a great lunch or salad for a BBQ! I used to love greek salad growing up and really missed it when I turned vegan, then I discovered I can still make it! In this recipe I use tofu because I really don’t like the vegan feta options on the market except macadamia feta but that is crazy expensive!
Ingredients
For the dressing:
50ml oil of your choice (I used rice bran oil because its cheap in Thailand)
Juice from 1 lime (make sure it’s a juicy one)
1 tbsp white vinegar
2 cloves of garlic, crushed
1 ½ tsps mixed Italian herbs
1 tsp thyme
½ tsp salt
For the salad:
3 baby lettuces (or 1 big one) roughly chopped
1 cucumber in chunks of your choice
½ red onion diced
10 cherry tomatoes quartered
A big scoop of olives of your choice, sliced
½ block of firm tofu cut into small cubes
Step 1
Add all the ingredients for the dressing into a jam jar, put the lid on and shake it up!
Step 2
Put all the salad ingredients into a bowl or tub with a lid and mix.
Step 3
Pour the dressing over the salad, give it a mix then put the lid on. It’s time to shake again! Then put in the fridge for at least 30 mins to let the juices from the tomatoes and cucumber mix into the dressing.
Step 4
EAT IT!!!
