This is another quick meal to make and its delicious and nutritious.
For Satay Sauce:
250ml coconut milk
2 tbsp peanut butter
2 cloves garlic
1 or 2 small red chillies (depending on your spice preference)
Splash of lime juice
Splash of soy sauce
1 small lettuce of your choice
1 block of firm tofu
1 tbsp sesame oil
1 clove garlic
1 tbsp sesame seeds
1 spring onion (chopped)
(and any other vegetables you want to add to your salad)
Add all sauce ingredients into a blender, and blitz it! Taste to check your seasoning and if you want to add a little more lime to make it tangy or some more soy. Put in fridge to chill!
Cut tofu into cubes and add to a pan with the sesame oil and garlic. Add salt and pepper and keep the tofu moving on a low heat until starting to turn golden.
Plate up – Line your bowls with lettuce leaves then add the tofu into the middle. Pour on the satay sauce (there will be spare satay sauce for another day) and sprinkle on sesame seeds and spring onion. And its time to eat.
