My lovely friend Grace is an incredible cook and she has shared her recipe for these delicious Sweetcorn and Chickpea Burgers!
400g canned chickpeas (don’t forget to save the liquid as you can make vegan meringues!)
½ bunch fresh coriander
½ tsp paprika
½ tsp ground coriander
½ tsp ground cumin
3 tbsp plain flower
Grab your food processor, chuck in the chickpeas, sweetcorn and fresh coriander and blitz them up.
Add the dried spices, flour, grated lemon zest and mix until combined but not smooth.
On a floured surface divide and shape into 4 patties, roughly 2cm thick. Then place in the fridge to chill for at least 30 mins.
Heat oil in a frying pan and gently fry the patties until golden. Then serve in your roll of preference with some salad and sauce. Enjoy!
