Gluten Free Sweet Potato Gnocchi

Ingredients

(Serves 2)

2 medium sweet potatoes

½ cup of Corn Flour (and a little for dusting)

1 tbsp oil

3 tbsp plant based milk

Salt and pepper to season

Step 1

Prick your potatoes and put them in the microwave for 8 minutes.

Step 2

Let the potatoes cool slightly, then cut in half and scoop out the middle into a mixing bowl (or food processor).

Step 3

Add the milk, corn flour, salt, pepper and oil and mix it all together until it begins to come together to form a dough. You made need to add a little more milk here or a little more flour depending on how big your potatoes are.

Step 4

On a floured surface roll your dough into a big ball and knead it for a few minutes. The cut the ball into quarters.

Step 5

Roll each quarter into long thin sausages then cut into inch pieces (or whatever size gnocchi you would like).

Step 6

Press a fork gently onto each side of each piece (this is not crucial, but it will help the gnocchi hold the sauce you serve with it). Then roll each piece in some more corn flour to coat.

Step 7

Bring a pan of lightly salted water to boil, then add the gnocchi. When the gnocchi start to float that means it is cooked!

Step 8

Drain the Gnocchi and add any sauce you fancy and enjoy!
