Tofu and Jackfruit “Tacos”

Chinese white cabbage leaves are a great gluten free or low carb alternative for tacos! Who knew!!! I was trying to use up everything in my fridge before my next vegetable box delivery and this is what happened.

Ingredients

Serves 2/3

Chinese White cabbage leaves (depends on size and how many tacos you want to eat)

240g Young Green Jackfruit

200g Tofu

½ sachet of taco seasoning

½ courgette

1 Big tomato

3 cloves of garlic

½ red onion

Juice of 2 limes

250ml water

Step 1

Dice onion, drain the jackfruit, crumble the tofu and add to a frying pan with some oil on a medium heat. Cook for 3-4 minutes until it starts to brown.

Step 2

Slice the garlic and chop the tomato and courgette and add to the pan along with the taco seasoning and lime juice. Add the water and let simmer for about 10 minutes, until the sauce begins to thicken.

Step 3

Wash your cabbage leaves, and take the taco mix off the heat. Spoon the mix into each cabbage leaf, you can add avocado, vegan mayo, basil seeds and coriander to jazz up your tacos. Time to eat!
