Pickled Daikon

This is a basic pickling recipe and you can jazz it up with different herbs and spices too! Then add this to salads or sandwiches to spice them up a little.

Ingredients

1 Daikon or mooli

1 carrot

½ cup of white vinegar

½ cup of water

¼ cup of sugar

1 tsp of salt

Step 1

In a pan heat the water, vinegar, sugar and salt until boiling.

Step 2

Grate or spiralise the daikon and carrot and put into a clean sterilized jar.

Step 3

Pour the liquid into the jar and put the lid on. Leave at room temperature for 4 hours.

Step 4

Put in fridge for at least half an hour and its ready to add to your tofu bahn mi’s or salad bowls.
