Thai Basil Aubergines

I had an abundance of Thai Aubergines in my veg box this week, so whipped this up. I love a salad bowl and have been chucking this into the mix.


(Serves 2)

6/8 Thai Aubergines (cubed)

½ Onion

¼ cup of peanuts

6 Garlic Cloves

2 Red Chillies

1 bunch of chopped Thai Basil

1 tsp soy sauce

Step 1

Add aubergines, chopped onion, sliced garlic and chillies into a pan on medium heat with a little oil of your choice. Fry for 5/6 minutes until starting to brown.

Step 2

Chop the peanuts and Thai basil and add into the pan with the soy sauce. Cook for a few more minutes and it’s ready to eat.
