Immune Boosting Garlic Soup

This week I was feeling a little run down, but luckily I live in Thailand where you can get a kilo of garlic for next to nothing! So I made (and devoured) a lot of this. Garlic is a great for boosting your immune system and fighting off colds or illnesses.

Ingredients

3 Whole bulbs of garlic (peeled and sliced)

1 onion (diced)

1 white potato

½ small white cabbage

300 ml vegetable stock

2 tsps caraway seeds

150ml coconut milk

Step 1

Add a little oil to a pan and throw in your diced onion and caraway seeds and heat until the onions start to go translucent.

Step 2

Throw in the garlic, cubed potato, chopped cabbage and vegetable stock and leave on a medium heat for 15-20 minutes stirring occasionally.

Step 3

Take off the heat and blend until smooth (either a hand blitzer or a blender will do)

Step 4

Pour back into the pan, add the coconut milk and heat for another 5 minutes. Add salt and pepper to taste and serve up. Sprinkle a few Baco bits on top or anything crunchy!
