
This is great for a lazy day when you don’t fancy cooking. You could also add a dollop of peanut butter to this recipe to make satay noodles.
Ingredients
(serves 2)
1 packet of straight to pan noodles or fresh noodles (I used tapioca based ones)
3 dried red chillies
2 baby corn
1 bok choi
½ cup snap peas
¼ cup peanuts
4 baby carrots
3 cloves of garlic
1 inch of fresh ginger grated
1 ½ tbsp soy sauce
Step 1
Add some oil into a pan and throw in the sliced baby corn, sliced carrots, peanuts garlic, ginger and chilli. Then cook on a low heat for 2 minutes.
Step 2
Put the noodles into the pan with a little water, the snap peas, soy sauce and chopped bok choi.
Step 3
Keep on the heat and stir continuously for 2-3 minutes until the noodles are cooked.
Step 4
Take off the heat add a little salt and pepper and serve up. I garnished mine with basil seeds but you could use spring onions or coriander instead.
